I guess if you have the need for speed and a 1000cc machine is the only way to quench that thirst, go for it. $7000 for a low mileage 1000 sounds pretty reasonable especially if it has power steering. I would assume it does, I can't imagine anyone buying a 1000 without it.

I fly USAF jets for a living, own a 1000 RWHP Camaro, and have driven some fast quads. Yeah, I do have a need for speed. It takes a lot to impress me. The 850 would likely be fine, but I liked the excessive power the 1000 had.

The new one I drove had 3 stages of power steering. I don't know enough about the Gen II's to know if all of them had this or not. It's nice, but not a requirement for me. I am really used to riding without it.

The G2,s have the same 3 setting power steering. Minimum, medium, and maximum. Mostly ride mine on minimum unless on a 100+ mile ride or plowing. Works great.

If I ever buy a brand new quad, ill probably get one with power steering. The 1000 would be quite an exciting ride. Probably as much faster than my Brute Force 650 than it is something like a Honda Rancher 350. The only quad I have ever ridden with eps is a Grizzly 700 and it was very nice. The Yamaha system isn't adjustable but it seemed to be just the right amount of assist at any speed. I would think if you're used to no eps, the minimum setting would be preferred for normal riding.
