Default 110cc Chinese ATV Turning off randomly during riding

I just got my ATV fixed from not starting at all, works perfectly now my only problem is when I ride for about 8 to 10 mins the whole thing turns off. I try to start it right up but its has some trouble and if I wait for about a minute it works just fine for another 8 to 10 mins. I don't know if the ATV is overheating because if I look at the metal thing where the spark plug goes into it has lots of steam coming off of it and it burns you if you touch it. Its gets a little frustrating too, I just cleaned the Carb, it looks like its on its last limb and it hasn't ran for well over 3 years after not starting at all (uncle put wrong type of gas in). I would like to know if that's the issue and how I fix it, thanks.

Fuel mixture too lean, wrong jetting or a/f screw adjusting.

Is it water cooled?
