If you are just going out to dune and ride around, stock knobbies work just fine front and back. My neighbor went with us last year and never got paddles. You have to keep moving though. If you are going to be shooting the hills or hitting the drags, you will definately need paddles for the rears. And for any situation, most people do fine with stock fronts.

Weight is your enemy in the sand (and everywhere else!)!
If your regular tires are light and float you pretty well, then you will be OK. I run Skat Trak Mohawks on Douglas Blue Label rims, and it's so light it's like having no tires at all! But, the rims will not stand up to landing huge jumps.

I do a lot of riding at the oregon dunes and my personal preference is straight paddles on the back and air-down knobbies on the front. I had the sand tires on the front but didn't like it - I thought it made the steering twitchy so I put the knobbies back on.
Some of my friends prefer the smoothies or mohawks on the front though.
Borrow a set and try them to see what you like better.
