You will proably have to retap your thermostat for the new temp sensor and dont use the old sensor. some people use it for the fan so they know when its on..
The oil, you need to put in a T connecter and splice into the oil return line.

the coolant temp gauge has to have coolent flowing on it to work properly, i just machined a small manifold out of aluminum and put it in the upper return hose, but the oil pressure gauge has to tee into the oil pressure- not the return line to the tank- so mine's at the stock oil pressure switch location, with a tee so my idiot light still works too, all good, i know the my ds's is runnin happy at a quick glance now, lates, josh......

the oil return line does have some pressure obviously because it must pump oil back to the tank, it does not however have the actual working pressure which would be present in the oil passages in the engine, the return line would be a good place to put a oil temp gauge though, but the easiest place to tap into the oil pressure would be the stock warning light-sender location, just get a brass tee and a little male-male 1/8" npt pipe fitting, cost: about $2. but for temp again the mechanical gauges are supposed to have coolent flowing over the sender, i'm not sure whether the thermostat housing cap has enough material to tap correctly for a pipe tap, or whether it has enough internal room for a sender which is like an inch long, mine works, i know that , lates, josh.... oh and i get 40-60 psi, oil, and 170-200 deg. on the coolant when i'm riding, lates......
