What do the available clutch mods actually do in the real world? Change feel? Less slippage? Improve low-end hook-up? I'm new and clueless. Thanks!

it does eveything you said. clutch kit is required if you start to mod anything. just adding a pipe will not allow the clutch to engage fast enough if you leave the stock spring in.

Clutch adjustment is required when peak rpm horsepower is changed due to pipes, porting,carb, ect. If you change any of the previous, the point where your engine makes power will change, but you will still be shifting at the old power point. Adding a clutch kit that matches your mods will allow your quad to shift at proper rpm for proper engine performance. If you stick with a major company such as hpd or Rick Ritter and run what they suggest for what parts you install it will be pretty painless!
