Default V Force PC Pipes/K&N Jetting Question

I just rode 60 miles this weekend in PA after installing my K&N Filter and Pro Circuit Dual Pipes on my V Force. I have a few questions 1.) I Put in a Moose Jet Kit which is supposed to be made by Dynojet ( I see Moose and Dynojet on the box, and even though the jets say DJ on the parts list, are they made by Dynojet or Moose?) 2.) The stainless comming right out of the header from the block is turning black to purple in color and fades into a gold color, I know exhaust gets hot but is this normal? 3.) Most importantly the quad runs very well with great power except for one minor concern. When I am crusing at 1/4 to sometimes half throttle and then quicky blip the throttle to accelerate the bike misses or is at a dead spot for only a fraction of a second. I checked the plugs and the front one looked grey to white in color. I then turned the front carb screw out and the plug is darker (richer mixture) but the problem is still there. My instructions say for my 1,000-2,000 foot elevation (where I run at ) says to shim the needles on the 5th notch, and set my front jet at 124 and rear at 128, as well as turn my mixture screws out 2.5 turns. Would any one try any changes that could fix this problem
By the way when you move to a larger number jet, does this make the quad run leaner or richer. Also the instructions says to sync the carbs, has anyone done this if so how is it performed?
Thanks for any input
Brian
