I know nothing of the Keihin but I took a loot at it, I assume you will have get 2 of those to replace the stock Mikunis?
Anyway I give a thumbs up to the Edelbrock, 2 years and not a problem. Install the carb and the bike starts right up without tuning. Ride for 30 minutes and check your plug for lean-rich conditions. Turn the dial at the top Right for rich Left for lean done. No more bogging on the whoops, no more stalling after a wide open run. No more choke, just fully pump the throttle 2-5 times if cold and you are running. I will be submitting a full tuning and mod guide for the Edelbrock on Raptortranny.com after I test some intake mods.

What have you done to the engine?

I have a full build 686 and the stock carbs just couldnt feed the engine. I went with the FCR 35s to get the fuel delivery the engine needed. I doubt the edelbrock single could do it for a fuel hungry 686. If you're running a close to stock engine then the edelbrock will be tons cheaper than the FCRs. First off figure out if you really need new carbs or can tune the stockers adequately for your application.

The FCRs have no choke, it's a beotch to get it started and keep it running when it's below freezing. You've got to give the motor some decent warm up time and even that can be a challenge. It likes to stall alot before it gets warm. Warmer weather it's not an issue, it'll fire right up and a couple minutes of idle it's ready to roll.

First off is there a specific issue with your stock carbs you're trying to address? There's alot of tuning that can be done with the stockers. If you're as modded as you're planning to get then the Edelbrock will probably be able to feed it fine but I just dont see it providing adequate fuel flow if you go with a bigger bore and porting. I doubt the FCRs would be a major improvement if you're not having any specific issues and only looking for better performance. In my case I just couldnt get the midrange and top end dialed in and the biggest jets I could find still gave me a white plug. The FCRs move alot more fuel and gave me back both mid and top where the stockers would let me have one or the other and not both.

I'd stay with the stock carbs and try to get them dialed in. Your money would be better spent on porting or a billet clutch basket.

I don't see why people start to drill jets when they first have to remember that the needle and seat inlet hole is about the size of a 175mj. So it does not matter what size your main jet is, its only going to get what can get in through the needle and seat. OH and not to forget once you have drilled the jets out now you run a risk of running lean on the top end and siezing up your piston to the cylinder, due to a lean condition.
