Default 2003 polaris 700 twin oil in coolant

Just installed starter and bendix. Thanks OPT for the help.
Put it all back together and knew is was idling rough so I sea foamed it and then changed the plugs. I was greasing and checking fluids as I had changed all fluids a few months ago.
When I went to check my antifreeze bottle saw it needed toping off. Pulled cap and it was like mayonnaise in the cap and rim.
It is still running rough when you give it gas but then it picks up ok with RPM's.No smoke or steam from engine exhaust.
So what is causing the oil in coolant and the bogging down on initial throttle? Oil is clear.
I can flush the coolant system but is that a fix? Also going to try and clean the carb.
Thanks for the help!

Seems like the 700/800 would have a film of oil at the top of the radiator or over flow bottle. Even the 500 would do this in the oil tank. Think it's because it's hard to completely seal the metal head gasket on these machines and the synthetic oil can seep a little over a period of time and collect at the top. If coolant level doesn't drop,no smoking, flush the coolant as you mentioned and keep an eye on it.Make sure you leave the radiator cap off, crank it up and let the fan cycle on and off several times to help remove all air pockets. Then top off the radiator and over flow bottle. I wouldn't just clean the carb. Install a good carb kit and only have to go into a carb once.
