Default 500 Quadrunner overheating?

I have a 2001 Quadrunner that the high temp lights comes on during normal riding. The high temp light comes on before the fan starts to run. After the fan runs for about a minute the light turns off. The quad runs normal and doesn't seem like it is getting that hot. I have brought it in to the dealer and they can't seem to find a problem. I think I am going to test the high temp sensor. Any ideas?

I think testing the high temp sensor is a good idea. That's what I would do first.
