What's a good fuel stabilizer to deal with ethanol in gas?

I use Phaze Out to keep water from separating out, but the best thing you can do is drive it often and keep fresh gas in it. I drive mine all winter and use my 500 to plow snow, so haven't had any issues, except the clear plastic bezel of the gas gauge is badly attacked by the ethanol, need to replace. Some have had good results using Marine Stabil, but if you are not going to ride for a few months, draining the tank/carb might be the best bet.

Stabil 360,Marine Stabil,StarTron are pretty good also. But like mentioned even with the best protection products out there it needs to be circulated every now and then to really do it's job. Carbs can dry out in extended storage even with protection and pilot jets are the most affected. Learned that on my old Honda when I had to pull 4 carbs after letting it sit.

You don't even really have to drive it if you don't like riding in cold weather. Just start it up and let it idle for a few minutes to warm up and then shut it off at least once a month. It keeps the battery charged too. Most atv batteries will go dead if left sitting for months. I'm not a big fan of cold weather riding but there will usually be a day or 2 each month in the winter around here when it is warm enough that I want to get out anyway. I remember last year it was 65 F on Christmas eve and I went for a nice ride before going to see my family later that day.

I use STA-BIL Storage and Sea Foam Motor Treatment. I used to use just STA-BIL but would double the amount it said. I haven't had any trouble with any motor that I used it in.

I use the blue marine stabil in my boat so I add a little in my toys when the weather get cold and they will be rode less. When I put my toys away for the season I always make sure to add some stabil and run it thru the engine before storage. My UTV get s rode year round so not an issue but still add a splash of stabil thru the cold months. Never had any fuel issues unless storage was for more than 1 year, but then nothing is going to help except draining.
