Looking for winter escape.

Looking for winter escape.
My wife rides her Sportsman, I'm on my KTM 350, we live in central Colorado at 8,000 feet, it gets cold up here.
We want to escape and enjoy some warm riding sometime mid winter.
Looking for suggestions, she is a new rider and would do best on mellow terrain. Hoping to be within a full days drive so we could go as far as PHX or so. Southern New Mexico is also doable. We will be in the truck mounted pop up camper.
Any thoughts?
