Check those needles, it's an easy thing to have happen and very easy to check. If you headpipe glows you're lean, not a sign of too rich a pilot jet.

It should run just fine with the jets you put in. I think that maybe you bumped the floats while jetting and they're off or possibly a defective pilot jet, not drilled thru or you put something in wrong or got some crud in there some how.
I worked on one set of carbs that a guy jetted and couldn't get it running right and I couldn't get it to idle right either. Well after taking them out a couple of times I looked real close at everything and noticed he had taken the air bleed jets out and when he put them back in he switched them ( Right in left carb and left in right carb) I switched them back and it purred like a kitten.
155/160 mains
25 pilots
2 1/2 turns out on the screws
Float level even to a couple of mm above the mating surface (tube method)
3rd groove on the needles
And it should run like a top unless there's something wrong, air leak. plugged up or something like what others have mentioned but NOT the jetting.
Adjust your valves while your at it.
