Replacing the chain on a chain-driven ATV is a matter of when, not if, and we applaud you for starting off on the right foot by picking up a tool that truly makes getting your old hardware off a whole lot easier.
The answer to your question has all to do with whether or not the chain in question contains a master link. Most OEM chains do not- and thus are considered “endless chains”. As you may have already figured, the only way to disconnect these style chains is to cut through the pins, grind off the pins or use a chain breaker tool to pop the link rivets out.
Endless chains are much trickier to reinstall than those containing a master link. In fact (and yes there are backyard mechanics who may try to argue otherwise), proper installation requires use of a small press and rivet tool.
A majority of aftermarket chains on the market today will take this stress right out of the formula by including a master link that can be attached directly to the chain pins with a steady hand and pair of needle-nose pliers.
If, as you stated in your opening line, you dread complications with the process of chain installation, we would definitely recommend going the master link route with your replacement chain.
