sending unit on Polaris

sending unit on Polaris
I am trying to find a way of testing the sending unit for the oil tempature on a 325 Magnum Polaris (oil cooled). If I unplug my sending unit the fan and overheated light come on. Is this correct? How can I test to only get the fan to come on?
