The difference is night and day.
Ok, maybe not that much but they are quite different. The scrammy is a tad lighter and the engine is timed a bit different to allow more pep. The scrammy also has a chain drive and the SP is a shaft, you can adjust your take off and/or top end with sprocket changes on the scrammy.
Scramblers are great in the mud, their only drawback is ground clearance.

I have a SP500HO, a buddy has a scrambler, it takes off and pulls away quickly. I would estimate his top speed to be 10mph faster.
I think if youre not using it for utility work, the Scrambler has the best of both worlds. An AWD sport quad that runs fast, turns tighter and costs less.

As stated, the only downfall with muddin the Scrambler is the ground clearance and chain/sprocket wear. Now I'm talking mud pit, goopy, hittin it hard type of mudding, not so much just encountering mud/water/muddy water. If you plan on muddoggin' then the Sportsman would be the better choice. Don't get me wrong, the Scrammy does great in mud, but it will get hung up more on obstacles and ruts, plus you have the chain to worry about (which I never had a problem with b/c the stock chain guard does fine). If you want an overall better trail quad, IMO it would be the Scrambler hands down. It is the most versatile trail quad IMO. You won't be able throw the Sportsman around like you would the Scrambler. The Scrambler will also be more snappy.
Depending on your riding style, if you are fast and a little more sport oriented and "crazier", then Scrambler is for you. If you want a smooth riding, more utility oriented machine that is capable of playing and working hard, the Sportsman is for you.
