First you gotta figure out the reason for the high idle speed. Something may have been put together wrong, or the idle speed screw is too high, or the cable is binding, or the slide is being held open.
Starting fluid is hard on all motors, and if you get carried away, it can actually cause some big damage. Youre best bet, is to get someone to pull it, and compression start it. Thats the easiest on the motor and easiest on you.
Just have the key on, in 4th gear, clutch in, have someone start pulling, with a lawn tractor or truck or another quad( you only need to go about 7 mph), and once youre moving ,slowly let out the clutch. Youll hear it spinning over, and it wont take long and itll run on its own.
Where is the air screw set? should be about 2 turns out from seated.

yeah anykind of ether will harm the engine and will make it run wild till it burns up, ether will burn the top of your piston not to mention blow the head gasket and blow it up if you give a nice amount. don't use it, ether was mainly meant for use on diesels and maybe a tiny spray into the air cleaner of a car, it's not meant for small engines, take hondabuster's advice and get someone to pull you up the road.
