I might suggest an LT80 for the youngest instead of the 50. The 50 is basically one step up from a Powerwheels. It's slow. And a taller 7 year old is probably too big for it already.
Or you could get a dirtbike instead. It's going to end up being less money and your youngest will end up being a more skilled rider in the long term.

Not sure exactly how much mark-up but I did alot of looking at z-400 before getting my Raptor and $5000 was the best I could find anywhere. So you figure they have more than $800 to come down and still make money. On the smaller quads this amount will come down some. If getting 4 quads at once Id make them deal though and dont let them charge you set-up fees, doc fees, etc these are just things to get more money out of you.

Just dont then the dealership your youngest age or they them with you, if they ask tell them you know the laws and the age requirments and all is good. If you dont want to do that them look in the paper for a used one, most private sellers don't care about the age limit they just want to get rid of the bike if it is for sell.

Don't worry about the age limit on those, you know what your child is capable of. And like they said, the LT50 is not much better than a power wheels. You can govern the LT80's if it fast than what you want.
About price, NEVER pay MSRP, and I won't buy from a dealer unless they work with me a little on the price. Shop around so you have some idea on what they are going for around you.
