when to decide your jetted right...

Default when to decide your jetted right...

i have been messing with my needle a lot... (stock pilot, 175 mikuni)
It am trying to safely get the most power out of it without being lean. The problem im having, is that it dosnt show lean/rich conditions very well (or at least not to me...)

With the clip (i am currently only running an E clip with a thin metal washer above and below, im not using the thick white washer)

on the 2nd from LOWEST position, it seems to be about right... If i were to move it two postions up, i get more power (i judge power in the needle by trying to do rolling wheelies from 1/3 or so throttle and up) I can wheelie easier, but it seems maybe TOO lean. (i tried going one higher than that, and it did start to have a lean pop)

With it on the 2nd from the lowest it seems my wheelying ability in 2nd is about right (maybe a bit less than it should be) but the fan is also still coming on a lot. Coolant level is sufficient, and it was changed out about 30 hours ago (in spring) with about 60/40 water/glycol with water wetter. (i also have a billet inline cooler running in the coolant line)

i feel i should be leaner to achieve best power (the power right now is good, but i just feel it could be better from how i have seen it run in the past)

So what should i do? due to the fact the fan is coming on would it be either im still running to lean (dosnt seem right...but always possible as im obviously not a pro at jetting) or is it a different cooling problem on the bike? (coolant not flowing correctly?)

just looking for some ideas so i can get this figured out. (i have a full set of mains, a 35/40/45 pilot, the stock and the dynojet needle so i can make just about any change needed)
