Default Rear tire/wheel combo for very wet conditions ?

I live in Florida which is nice most of the year, but during the summer where I ride, the water is standing mostly 2-12" and the holeshots I have on the rear just hydroplane over 5mph (going nowhere fast) ...
Has anyone had this problem ? and/or a solution ?
I was thinking of narrower rear tires and wheel with an offset to match the existing width I have now, what are your thoughts ?

Summer is coming and it gets very wet here......

I hate when it gets wet out and the knobby tires spin so i always get a hardcore tire to keep traction in the wet stuff. Im runnin the Mud Shark rears right now and they work awesome, good in snow, mud, dirt, wet fields, ect. I ordered a set of Mud Machines for this summer tho so i will be selling them if ur interested PM me, The dirt devils r narrow and tall and hook up good i hear also
