Normal Temperature

Hi, I just got back in to the ATV ridding. I had a ALBA 200 Bombardier DS650 will all the toys. Now I just bought a 2004 DS650 Baja X (Black). I just found out that the company is now called Can-Am. Well, don't understand but my question is regarding the normal running temperature for the DS650. Mine has a temp guage and I noticed that it runs at around 200 degrees and also this is the temp that the fan turns on.
I find this feature pretty cool since I had never seen one back in the days. But since this bike is all tricked out I just wanted your help in making sure I don't run to hot and to realize a problem before I burn the engine.
My question is as follows:
What is the expected normal temperature for this Rotax engine?
When does the fan start?
What would be the maximun temperature before dammage?

shop manual specs say fan on at 204, at least my old manual does, but every gauge and switch is gonna be a little off one way or the other give or take.
the red warning light switch for overheat is made to trip at 239 degrees.
