After I ride a little while the red light comes on then starts blinking if I don't shut it off for a few min. Just changed oil, coolant is good, fan comes on, and the radiator isnt blocked with mud or anything. ????

 

Are the fins on the radiator meshed together. look closely,if you can't see through the rad itself you got a bad radiator.They had a problem with some of the radiators from there manufacturer that swelled and closed up. I know first hand because happened on are outty.It's a free fix if that's what it is.
