Excellent choice. Not the fastest, but one of the best overall machines out there for whatever you wanna do.

There really is no one ATV that's good for all of those. If you want a machine to do work, you need a utility quad. If you want to race, you will want a sport quad.

Utility quads like the Grizzly, Polaris Sportsman, etc are big, heavy, powerful, and have 4WD with big aggressive tires. They are great for use around the farm and going through the deep mud.

Sport quads are smaller, lighter, fast, and agile. Great for racing and having fun, but worthless for doing work and mudding.

For trail riding, it all depends on what kind of trail you are talking about. Some trails are pretty much a just dirt road, and some are full of mud and rocks.

Sounds like any of the newer big bore utility quads are probably what you are looking for. Tons of power to get the work done, and plenty fast as well. As far as brand goes, it really just depends what you like. Used to be that Honda was the only way to go and everything else was pretty much junk, but I think all the manufacturers make a pretty good product these days. Polaris has treated me well, and everyone in the Polaris forum seems to love their Sportsmans so that's probably what I would recommend. Plenty of other good ATVs out there though.

Fastest per cc in a utility quad tends to be Can-Am. As said above 600 plus pound quads aren't sporty. You can toss around a true sport quad with a little body English where a utility requires a lot more attention and is tougher to manipulate with body English. If you're going to be doing farm chores you will need racks to carry stuff. Rules out the Can-Am Renegade which is a sporty quad with 4wd and an automatic CVT clutch. Can-Am Outlander, Polaris Sportsman 850 XP, Arctic Cat 1000, and Kawasaki Brute Force are the top utilities speed-wise. Polaris is probably the most comfortable ride as far as spending a day in the saddle. Don't know too much about Arctic Cat. The new Brute Force is a pretty powerful all around quad but not as comfortable a ride as the Can-Am or Polaris. Yamaha Grizzly is not near these quads power-wise but is a great all around quad for work and fun.
