Will my 300ex blow up with a K&N

I just finished a post on a similar topic on this forum. Any time you increase air flow either intake or exhaust, you change the air/fuel mix, meaning that increased air requires increased fuel to compensate. Also, 4 strokes require a prescribed amount of back pressure to operate the valves efficiently. I'm not familiar with the silencer on your ride so I can't say whether removing that plate will affect this or not.
By "blowing up with a K&N," if you mean seizing, if the filter, any filter, causes the engine to run very lean, yes, in worst cases.
Bottom line, there are just two things that determine whether you're running lean...yourself by doing a test ride/plug read, and the other thing that can tell you is the bike when it seizes or burns a valve. Hopefully you will know it before the bike

Well, i ordered a K&N last week, and it was so explosive when i opened the box it blew up in my face... i can only imagine what it would do to a quad.... just do what i do, run no air filter at all, the sand mixes with the gas and air to make the engine react almost as if it was turbo charged... its a killer combination.
