400ex header pipe too hot

You could be running lean. Don't forget that the EX is air cooled and if you are going slow through trails it will get hot and the heat has to go somewhere. Even during cooler fall and winter days the engine can get pretty hot when the air is not moving over it. This is pretty normal.

There is no thermostat on your quad. Heat is controlled by the air fuel mixture. More fuel means cooler exhaust. Anyone who has an EX has most likely noticed the stock head pipe turn blue from heat (stock148 main jet is pretty lean). By simply changing the main jet to a 150 this problem is prevented. This doesn't mean that you can jet up to keep the motor real cool though. The air fuel mixture has to be at a point where the motor will run right. I personally jet mine just a little rich because its safer that running a little lean. I might be loosing a little power because of it but, the average rider can't tell the difference.

heat wrap or ceramic coating will help. if you go with the coating, i would have www.swaintech do it. their coatings are much thicker and more durable.
