Ok, I am Polaris biased, but it is based on experience. My buddy has the 500, and I absolutely hate that thing. The suspension is cush, but it is tall and sloppy, and the ergonomics are terrible. I won't bother going on and on, but I could....
The Foreman is pretty much a pure utility/work quad....part time trail quad. It isn't going to be as cush are the Polaris, but it will be more stable and have way better ergonomics. Speed? The Polaris will be faster. The ES systems are having a lot of problems lately, so buyer beware on that one!

sportsman 500 vs. foreman 450 es
My last ATV was a 2001 450 Foreman which I sold for a SP500. The only improvements I noticed the 500 had over the 450 is the 500 has a smother ride,more traction,better steering (450 was full time 3x4) better ground clearance, better brakes and tons more power. You would think 50cc would not be a big difference but it feels more like like a Foreman 300 not a 450 vs a SP500 in comparison.
I ride my friends much improved 500 Foreman and it falls short to a Sp 500 in ever category also but the steering has improved. Foreman 500 vs SP500
