Most folks never adjust their valves, and might change the oil once a year, if that....so like with any used machine you are taking your changes! But, these are solid machines, that will stand a lot of neglect....
Ask about maintenance issues, but as you know the seller can lie to you. If they get a dumb look on their face when you say "valve adjustment", then you might want to reconsider.
If you get it, do an oil/filter change first thing, change the oil in the front and rear differentials, and by all means do a valve adjustmen!

Pricewise, the NADA guide shows an average retail of about $2K for this particular model/year ATV, so the seller is not exactly 'giving it away'. But this price is only a rough guide.
Only you can determine what kind of condition it's in. You'd want to deduct off of this price for obvious defects (broken plastic, torn seat, excessive rust, bad battery, etc). Look at the oil on the dipstick - is it thick and black? Look at the muffler - is it caked? With an ES especially, make sure you can shift through the gears. If you're not particularly familiar with ATVs in general, try and take along someone who is. I have a 350 Rancher too, and really like it, though it's only a 2WD. Good luck with your search!
