honda 185s throttle question

hey,
I have a 185s that i recently restored to near perfect working order, but just have one question. I noticed that when i start up the bike and let it idle, then slam on the gas it just bogs down and will eventually stall. In order to get the revs up i have to apply the throttle in a sane manner. Is this just how these things are? Or is there anything i can do to fix it. I suspect this has something to do with the float level maybe? But it is set correctly. Also, how can you tell if an engine is running rich? Just wondering cause mine seems to work good, has lots of power and certainly doesnt backfire.

OK just an update, i was reading some other threads and saw that you can deterime what the engine is running at by reading the spark plug, so i put a brand new one in and started it up, rode it for about 5 min mostly at idling speeds. Then checked it and it was black with some traces of brown. Does this mean it is running rich only at idling speeds? If i turn the pilot screw in all the way the bike doesn't seem to change idle speed. And also, what effect does the main jet have on the performance of the bike? Because mine used to backfire, so i just kept moving the jet needle up till it stopped, it's now on the 4th notch.
