how often do you need to adjust the valves on a 400ex? also how hard is it?

They should be adjusted after the first 20 hours of riding. Maybe every other month after that. It is very easy to do. I would suggest getting the complete Honda manual. It was the best $40 I ever spent.

I believe exriders.com gives directions on how to do this maintenance.

Yes they do, in their tech section, complete with pictures.
