Any suggestions on cooling for a Honda 250ex.

Is your 250EX getting Hot?

Are you going to be riding in heavy duty mud/water or will this be dry riding?

If dry I might have a suggestion.

Mostly dry. When it gets hot it stalls when I come to a stop

 

I think this is something other than an engine that is to hot. It's as hot here as you are in Modesto, and neither the 250 or the Recon (same engine) are bothered by it in the least. I would consider carburation first.
