Probably not alot, but besides a winch and tires, what are some mods for my quad?

More specifically, what do you want to improve?
Sometimes, doing nothing is the best thing you can do. Whatever you change on a stock machine, it can negatively affect as well.
How about doing some maintenance work instead, and make the ATV run as best as it can?

Have you checked your plug lately? If it looks dark and covered with carbon, try 112.5 main jet.
Have you checked your toe-in spec? Bring it to 0 or slightly to negative side so that handling can improve.
Have you adjusted valves lately? Starting will be easier and idling will be smoother.
There is a whole bunch of other things to check/adjust.

Add-on mods:
1). 12 VDC power outlet
2). Tachocmeter
3). Hour meter
4). Oil cooler and temp gauge.

By the way, don't use high gears in low speed riding on your 250. You will burn up the semi-auto clutch plates.
