I use a Sony DCR-TRV460. It's a Digital8 camera and uses Hi8 tapes so it's bigger than the MiniDV, but it's also cheaper. I've been happy with it. Night modes work great (picked up the arcing of high tension power lines (120,000 volts) in fog that we could hear, but not see.) Sounds was good.

I use a Firewire/IEEE 1394/iLink connection to the computer. Note, those are all the same thing, just diff. manufacturers names.

I run Linux so these probably aren't of any use to you: dvgrab to capture, Kino to edit and compress. Well actually Kino works also as a front-end to dvgrab as well.

I use a Sony MiniDV camcorder with a helmet cam from SportZShots to record my video. I then use a firewire connection to the PC to transfer it and Vegas software to produce it.
