Does anyone know what the correct weight engine oil is for the 2000 sp500.The manual just says polaris sinthetic.

The correct engine oil weight is 0W-40 synthetic oil. Not sure if Mobil 1 makes one in this weight, but thats the one they recommend. Make sure that is the "SH" designation type.
