Maybe in the process of restarting it, the plug became fouled. Not as likely to happen to a 500 as opposed to a 400, but it is a possibility if it became flooded in the restarting process.

I like the fouled plug idea. Is there a drain screw on the float bowl to check to make sure you have fuel to the carb?

You need to try this tool, looks like it would work in your situation. Spark Plug tool

The 500s have a fuel pump that sometimes loses its prime. The best way I have seen to re-prime them is to remove the seat, put your hand over the intake horn to seal it off the best you can, and then crank the engine over.
If it sputters with the choke on, but won't run, it could be because the plug fouled, but it could also be there is just enough gas in the bottom of the carb that it fires, but not enough to run.

If you have the rubber horn that comes off the front of the airbox that you can get to, all you have to do is cover that up. Some machines newer than mine (not sure on yours) has the intake up beside the gas tank cap. For those you might have to take the air cleaner out, and cover the hole to the carb. The better you can seal it, the faster it will re-prime.
As soon as it fires up, remove the restriction, or you may flood the engine.
