I think the one you are referring to is like the ones on jet skies. It is for when you fall off your quad it will shut it off for you. I would put one on if you are prone to falling off!

how do you shut it off with out the kill switch?

If you are talking about a teather kill, then it is an added safety feature to kill the motor in the event you crash/fall off. If you ride at a track at all or plan on racing, one will most likely be required. For trail riding and recreational use they are not as big of a deal but still nice to have.
