Acceleration and top speed go to the Predator, its simply a faster quad. The z handles very well. I have not ridden a pred, but from what i have seen and heard, the bump steer tech is first rate. Handling is probably close.
The best quad is another question. The predator is a little over 400 pounds. Thats raptor territory. The z is a little smaller and lighter, so is easier to throw around. Both would make excellent quads.
As far as the reliability, neither is spotless. The frames have been somewhat brittle on the z, but the rear axle problem has been fixed with the new quads. Polaris hasnt had the quad out very long, so its hard to tell, but no major widespread problems as of yet.

Yea I have rode a predator and it def has the acceleration on the Z but does not have the handling of the Z. They are both great quads it just really depends on what kind of riding you will do more. Z-trails and mx Predator-MX from what I have heard not a good trail bike
