The cam opens and closes your valves. Stock cams are designed to deliver power over the widest area with the stock compression so that you can run crap for gas and still run decently. The aftermarket cams work best with higher compression pistons and they basically move your power around to a specific area you desire. For example, some cams allow the engine to rev higher at the expense of bottom end power and some do just the opposite. You can have more bottom end by upping your compression and displacement and or the stroke of the crank. It's a long and drawn out discussion.
