Default How cold is too cold for the engine?

Need advise here folks... I just installed a 12 fin inline aluminum cooler on my 03 Raptor & just got back from test rides. The engine temp never got over 150 & noticed that the bike stalled & the engine cut out a few times. I would have to pull the choke to get it running again. In all my years with the bike I never used the choke. Could the engine temp be too cold now? The outside temp today was in the mid 50's here in So Cal... I never paid much attention to the temp before the cooler so I can't say what it was before. what temp is normal? Should I keep it or install it only in the summer time?
