I have a buddy with a Grizzly that has fore and aft winches. I think mostly he is to lazy to figure out how to turn the bike around. when he need to use the winch. But it can be done.

I've been looking at a rear winch setup for some time. I think I'm going to mount it up higher as my expereince has been that when I'm winch stuck - the winch is deep in it. I was even thinking of mounting it upside down under the rear rack. I have a rear winch on my Polaris pictured here under that rear basket.

I was thinking a L shaped 2 inch deal that slips into the reciever might also be a option. I can put a trailer ball on the bottom side of that L so Im not giving anything up. THat would allow the winch to be mounted a little higher than where that box is.

Now I like the reciever mount setup. Not only is it high but you can remove it if you are riding an area where it wouldn't be needed. Or even mount a reciever on the front and have 1 winch for either end and just use a welding cable plug set up to plug the power in on either end.
