First off, I always wear full safety gear: Helmet, goggles, gloves, chest protector, elbow and knee protectors, and MX boots. You can wear all this stuff for years and never need any of it, but that one time when you do need it it might just save your life.
I wear MX shirts and pants. I especially like having the pants. They are wind resistant and won't shread in a crash like jeans will. In cold weather, I layer long underwear under the shirt and pants (different weights, depending on how cold it is).
The minumum outerwear I carry is a light breathable waterproof GoreTex jacket. Fortunately around here, rain storms are very predictable, but in the mountains we can get into afternoon thunderstorms or even snow almost any time, even in summer. If the weather is going to be colder or rainy, I will carry a heavier waterproof jacket and waterproof pants.
I also always carry a waterproof poncho. It is nice to have something to throw over yourself when you are off the quad in wet weather, and it can be made into a make-shift shelter if needed. We were on a fall ride last year, and one of the guys forgot to being a jacket. It started snowing and the wind turned bitterly cold, so I was glad I had a spare poncho I could give him to wrap up in.
I don't like strapping a bunch of weight on the quad because it effects the quads handling, even when I am on a utility with racks. I try to keep my load light and compact enought to fit into a backpack, and I carry it on my back most of the time.

Helmit goggles gloves n normal pants and some type of shirt. nothin fansy cause race pants or boots are not going to save me if i crash. I have $500 worth of race gear that i only used 1 time. Only thing that will keep you safe is the helmit
