Tire Sizing Questions

Okay,
I've started to spend money on quad-mods. The dam has broke and there is nothing between me and my upgrades except my credit card limits :> I tried hard not to spend anything but I broke a few things so here it begins..... replacement parts on order. It sure is alot more fun buying upgrades than repair parts!
Anyhow, I'm going to order a Lonestar axle and a new set of rear rims/tires next.
I've ridden alot of street bikes in my past, but the whole off-road thing is new to me.
Razrs, Holeshots, or Shredders seem to be whats popular at my local riding spot. Unfortunatly, I've only ridden with the stockers. I want something with significantly less side bite.
Anyhow, what do the sizing options do to handleing? I don't seem to have any clearance problems with the stock 20x10x9 size. Should I be going with the 6-Ply 20x10x9 size in one of the brands above? If I go up or down a inch on the rim, what does that do? What about the bigger tires, what does that do?
My riding will consisit of mostly trail riding. There is a small track locally but I enjoy heading up the fire roads and finding trails to buzz around.
I just picked up Sand Sharks for next weekends trip to Pizmo in a 20x11x10.
