Default Help with rear brake question

I own a 87 Honda TRX250 Fourtrax Utility ATV. I have watched 2 videos on rear brake replacement and it seems easy enough but in both they removed the brake cables before replacing the pads I can not see the reason for this. So my ? is do you need to take them off.

Default answer to my own ?

The cable did not have to come off completely but it was not that hard to put them back on. The brakes looked new so I have no idea why there is a grinding when I apply them. The drum could have been cleaned up some but it was not that bad. I hurt my back so I just put it all back together I greased up the fulcrum point of the shoes. The fronts were sticking and I freed them up by sliding them down.
