I ran 27 Mud Machines on my old 99 500 stock and when I had the lift on it. You could easily go up from there if you wanted. One thing though, right before I sold it, I took the mud machines off and put the stock rims/tires back on to sell. I had to remove the lift because the angle made the stockers rub (maybe I couldnt even mount them, can't remember but there was a problem with that stock rim/tire setup). Mine was the 99 model that single year that they came with 26" Titan 495's, but I think any larger tire gives the same scenario.
Also, for 99, they had 6.5" wide rims all around. I bet the 98 models had 8" wide rims in the back just like the 454 did. My 27" tires pulled fine with that quad, but you could notice the power dip with them. Depending on its condition, you might check that main driveshaft bearing. Those models weren't sealed well, and this was a pretty easy thing to go out, especially if you mud it. I blew one out in the mud, and my cousin went through 3 on his 98 4x4 (same quad, different engine). As far as snorkeling, I know nothing about them, but I bet you would have to make one. Those models had very little aftermarket stuff available, and I bet the snorkel is no different.

I uploaded some old pictures of my 500. I've got a set on there to show fender clearance with 27" Bi/Tri Claws and the pictures side by side with the Grizzly are when the AC had the lift kit on it. I think the point of that set was to show the ground clearance between a lifted AC500 on 27's compared to an 02 Grizzly on stock Dunflops. It was basically the same. Arctic Cat put out the 500i shortly after and took care of the ground clearance issue.
