how do wire a toggle switch to the fan so it comes on when I want it to fan isn't coming on now

 

Find the temperature sensor that's either in the radiator or in the block depending on which motor you have, verify that you have power going to the sensor and no power coming out of the sensor using a test light, then run two wires, one from each side of the sensor to a two pole toggle switch effectively by-passing the sensor and giving you "on demand" control over the fan.
