Foreman or 400i?

IMO, for everything you listed except speed, the AC would be the choice, hands down. Especially in mud and hill cimbing--the suspension would keep the power on the ground better, and the ground clearance would ease its way through the mud. I'd bet it rides better, too.
Ride 'em both and see what you think?

Except for speed, definitely the AC. We rode a couple of weeks ago with a Honda I think and a Yam and climbed a very big steep hill. The other two kept highcentering on a big pipe that was going up the hill and almost flipped over. I just went right to the top and never even broke a sweat. I convinced them on that hill climb that they should get an AC next and they said they were definitely changed to AC after seeing what my 400i could do!!! 12 inches of ground clearance all around and 10 inches of wheel travel, can't beat it!!! Thats more GC and wheel travel then even the IS of other manufactures big bores!!!

Three weeks on my 500i (just about every day), and I can vouch for the Cat's excellence in some of those areas.
Mud? Don't know, not much where I ride. It will cross a deep creek without drowning.
Hillclimb? The best. The rockier, the better. Bags of controllable torque, and the wide stance, ground clearance and wheel travel make it very steady. It climbs, well, like a cat. Despite the height, it doesn't feel the least bit tippy.
Trails? Absolutely. Surefooted, and it won't rattle your kidneys out. Very civilized ride. Doesn't lean in the turns, and keeps going the direction you want it to, even when you whack something unexpected.
Speed? An honest 50-55mph, but that wasn't a priority with me. The engine runs out of steam on the high end, but low and midrange torque is terrific.
Work? I've had 400 pounds on the racks, pulled a medium grade hill, and didn't bottom out. It will drag a pretty large hardwood tree around, too. (after the tree is down, of course)
Showing off? Depends on what you're doing. The rear end sticks too good to slide around and cut doughnuts. Won't win drag races with similar displacement quads. But, if your idea of showing off is going places most quads can't go, tackling the really rough stuff, or otherwise doing the things you really buy an ATV to do, yes, it will show off.

02 500i - feels better every day
91 big bear 4x4 - for sale, but I kinda hate to let Old Faithful go.

JohnO summed it up really good. The only thing that I would recommend is replace the Dunlop tires with something with a better bite. The lugs are not very deep. If you go through the thick, sticky mud they fill up quickly. Then you might as well be using racing slicks.
I don't understand why Arctic Cat didn't put Titans on all of there ATV's. The 250 and 300 have them, but anything above does not.

My wife looked like she had better traction than me in the slicker mud. So I would say "Yep".
I can't really say for the sand, but they handle everything else nicely. The ATV handles with out problems, too. Some tires you get will affect how the ATV turns.
