With the mods you listed and living in the Southern region, start with a 145 and go from there. So many different things can play a part in jetting that even two bikes built alike will sometimes run jetting that isn't even close.
In my opinion, that 180 jet you have in a stock carburetor is a bit overkill. The stock carb couldn't flow enough air to keep up with the mods neccessary to require such a large jet.
