Whats the biggest bore you can go to?

The 200X engines vary by year. The early engines are 65mm bore by 57.8 mm stroke. This makes them a 192. The 86 model is 65 mm bore by 60 mm stroke making them a 199cc motor. Powroll does a 66mm bore with either a stock or stroked crank for up to 218cc's. I think wiseco sells up to a 67mm bore. In theory, you could build a 67 mm bore by 66 mm stroke for a 232.69.
That being said, you won't gain enough power to justify wasting good bores. Just go enough over current to clean up the cylinder. With the old school engines, more is to be had with porting, cam, head mods, carb and compression. There are lots of good engine packages out there for the 200x as both Tom Carlson (TC Racing) and Curtis Sparks both had some unbelivably fast 200X's...
