You're going to get a hundred different opinions on here... none are wrong or right. When I was looking at buying my quad just 2 months ago, I was down to either a Raptor or Predator. I chose the Predator TLD because the stock package was so much better than the Raptor's.
Handling on the TLD Predator is great. They have the Fox adjustable shocks with reservoir and the Polaris PRO front end. It is a great stock machine and has already won 2 Sport Quad of the Year awards. However, I think you should take any advice with a grain of salt... I own a TLD so it's obvious that I think it is a great machine.
Other choices... the Z400/KFX400 is great and maybe take a look at a hybrid since you want to do mud and water.

If you want a good engine and want to feel the acceleration I'd definately get the BF 750. Not only will it beat alot of sport quads but its good at speed, mud, and water. I havn't even had to use my winch to pull myself out. It has been used to pull out alot of other 4 wheelers
