A few Questions?

I am 6'3" 230lbs and when looking at ATV's I am unsure what to get. I have noticed with some of the 350's they feel a little small. I like to do a mixture of trail, sand ridding, and occasionally jumping. I am seriously looking into a YZF450, EX400, or TRX450R. Am I going in the wrong direction?

Depends on whether you feel cramped on any of these????
All three are superb machines! I like the EX for tight technical trails, the YFZ for jumping and play riding, and the R screams out in the open desert. My buddy has a KFX 450, and it seems like a nice machine as well. Also consider the Suzuki Z400, which is probably the best all-around machine out there. If these are to smallish for you, maybe take a look at the Raptor 700 which is a bit bigger.
I say stay away from the DS650 and KFX700.....these machines are big and heavy.
The 450's are really the state of the art. The ultimate in light weight performance!

It sounds as if I need to reconsider and look into a Z400.
Looks as if I will be doing some testing this weekend.

Both my 400EX and 450R have a weight limit of 243 pounds, so you are near the upper edge. Whatever you get, you will want to adjust the suspension for your weight, and don't just leave it at the stock settings.
Keep in mind that all the 450's have thin little pistons. This means that they experience a lot of blow by, and the oil gets contaminated with fuel very quickly. All the 450's need frequent oil changes! They are all more maintenance intensive than the machines from the past.
