Default jetting is confusing me

bike: 2001 DS650, HMF slip-on, RWR CDI, stock replacement K&N filter, elevation 700--800ft

previous setup on carb: stock 40 pilot jet, 185 dynojet main jet, dynojet needle on 3rd clip, airscrew 3.25 turns out.

My local mechanic thought I might be a tad lean on the bottom. So Installed a 45 pilot jet. I also ordered a 175 & 180 Mikuni brand jet(s).
I installed the new pilot but when I went to install the new main I noticed the Mikuni had the larger head on them & would not work

So I compared a 180 Mikuni against the dynojet chart. It rated it to be a 192 dynojet. The closet I had was a 190. I installed that.

turned airscrew 3-3.25 out again.

Next I noticed on here DS owners complain about the dynojet needle. I decided to try my stock needle on the lowest notch.

(Both the 180 Mikuni & stock needle I found suggested on the forums).

I went for a ride & found the real low bottom fine. When I roll into the throttle with the rpms medium in say like 3rd gear I get a rich type miss & sputter. However if I go the same ground speed but in 2nd gear & roll into it seems better. When it winds out it seemed to pull hard.

I went back moved the needle to the 4th notch. (next to richest). Upon riding I kinda got the same thing. Maybe not as hard as pull on top end though.

Moved the needle to 3rd notch. Mid felt much "crisper" when rolling from a low RPM. But the top end didn't pull as hard.

This is where I quit for the day.

My mind says it's the needle, being top end doesn't sputter when reved out, but when I had the dynojet needle on the 3rd clip & a 185 dynojet (only a 172.5 mikuni) It ran better as far as reliable & smooth.

So do I try the stock needle on just the second notch? ( lean in the middle I would think).
Try the dynojet needle?
Or just put the 185 jet in & call it a day?

I want power, but reliable smooth power.

I found this comparison chart. It also says the jets not only are flow rated different, but machined & chamfered different.
jet fighters

Thanks guys.

Depending on elevation I would start at 4th groove from richest on stock needle, 172.5 mukuni main jet and stock pilot jet. That should put you very close with your mods.

I run a HMF and I ride anywhere from 400 to 1200 ft. My jetting is 170 Mikuni main, needle in the fifth position.

Go back to the dynojet needle. I've switched back and forth 3 times and absolutely love the dynojet needle. You should go with the 185 dynojet ,3rd clip, 45 pilot and tweak the airscrew till the bottom end runs crisp and get a 190 dynojet for cold weather or sea level.
