I believe the diffrence is boiling points.
The higher the DOT number the higher the boiling point is.

I boiled the stock fluid in my front brakes & they went spongy, I put in Motul 5.1 when I put on my braided brake lines. It has a dry boiling point of 522 degrees.

What ever you use you must keep moisture out of the fluid at all costs!!!
Brake fluid can absorb moisture out of the air. Keep your resivors full & tightly capped. Keep the lid on your can of brake fluid tightly capped.
Any moisture that gets in the brake fluid dramaticly reduces the boiling point.
As an example Motul 5.1 has a dry boiling point of 522 degrees & a wet boiling point of 365 degrees.
If you boil your fluid the braking effeciancy drops drasticly!!

DOT 5.1 is not a silicone based fluid so it is compatble with DOT 3 & 4. DOT 5 is silicone & must not be mixed with DOT 3, 4 & 5.1!!

That is correct the boiling point of dot4 is higher than 3, but whatever you do don't mix dot 5 with it, or even put Dot 5 in your bike, it is silicon based, and if it isn't compatable with you lines and seals, they will swell and ruin anything plastic or rubber in you brake system.

i learned the difference about dot 3 and dot 4 about 3 weeks ago. i changed the brakes on my raptor and could not get any brakes at all. i mean you could hold the pedal down and ride all day. i used dot 3 because i had 1/2 of a small bottle. used all of that bleeding them and still no brakes. bought a bottle of dot 4 put it in and after 5 pumps on the pedal bleeding the line. i had brakes. still dont now the difference between the two. the master cylinder could tell the difference.
